Winemaking Philosophy

Creating small batch premium wines with grapes sustainably grown is a philosophy that starts in the vineyards and is carried through every step of the winemaking process. Daniel’s “less-is-more” approach at Bottega Wine Studio™ extends far beyond the vineyard.

His winemaking methods, which is based on allowing the vineyard to express its own voice by making wine with minimal intervention, has caught the attention of the Canadian wine community.

Daniel’s passion is making Rosé wines. His meticulous winemaking craft is also on full display as well with his red and white wine portfolio. Daniel believes that the best future the BC wine industry has will be linked to crafting top-quality wines and how the vineyards are farmed for future generations.

Daniel is also committed to sourcing ideal fruit that fits his vision of rich and expressive Bottega Wine Studio™ wines. He spends time with the growers, in the vineyard, tasting fruit and determining just the right moment for harvest. In the cellar, he works to let each lot express the nature of the place where it was grown.

Our commitment to “small lot” winemaking means our wines are made in extremely limited numbers.

Every wine made tells you a story and shows just how many cases or bottles of that wine were made by hand. Sometimes so small they disappear very quickly. The small lot meaning resonates beyond the bottle and influences everything we do at Bottega Wine Studio™.
