Viticulture and Winemaking

• These certified organic merlot grapes were grown by the outstanding Kozier Organic Vineyard on the Naramata bench in clay and nothing but.
• Single cluster cropped to 2.5 tons/acre with water stress
• Harvested on September 24, 2016 at 26.5 brix in small 30 pound picking lugs to minimize pre mature crushing
• Destemmed to achieve 85% whole berry structure, then hand dumped into 1 stainless steel tank and 1 macro bin
• Inoculated with cultured yeast after a 4 day cold soak
• Gradual temperature increases to 30 C with plunging the cap 3 times daily
• Total length of maceration 40 days
• Basket pressed and transferred to 100% new tight grain burgundy barrels for 12 months and underwent full Malolactic

This is something of a tour de force – a bold, rich wine with great intensity. It begins with aromas of cassis, black cherry and plum with a hint of liquorice. On the palate, there are flavours of plum and fig mingled with a medley of spiced dark fruit. This is an age-worthy wine. 92-94.
